  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup brown sugar
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and brown sugar until smooth. Add apple cider and vanilla, mixing until combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in cinnamon and nutmeg.
  5. Pour the mixture over the crust in the springform pan.
  6. Bake for 55-60 minutes, until the center is set. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, consider adding caramel sauce on top before serving.
  • Make sure all ingredients are at room temperature for a smooth batter.
