Apple Cinnamon Muffins with Crumble Topping

Delicious and easy to make, these Apple Cinnamon Muffins with Crumble Topping are perfect for breakfast or a snack.

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced apples
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix the flours, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the melted butter, eggs, and vanilla.
  4. Add the wet ingredients to the dry ingredients and mix just until combined.
  5. Fold in the diced apples.
  6. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  7. In a small bowl, mix the brown sugar, oats, and nutmeg for the crumble topping and sprinkle on top of the muffins.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool for a few minutes before serving.

Notes

  • For a sweeter muffin, add more sugar as desired.
  • Try adding nuts for extra crunch.
