- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup diced apples
- 1/2 cup brown sugar
- 1/4 cup rolled oats
- 1/4 teaspoon ground nutmeg
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix the flours, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the melted butter, eggs, and vanilla.
- Add the wet ingredients to the dry ingredients and mix just until combined.
- Fold in the diced apples.
- Scoop the batter into the muffin tin, filling each cup about 2/3 full.
- In a small bowl, mix the brown sugar, oats, and nutmeg for the crumble topping and sprinkle on top of the muffins.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before serving.
