  • 2 pounds baby potatoes
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, then place them in a baking dish.
  3. Drizzle the olive oil over the potatoes and sprinkle with garlic powder, oregano, salt, and pepper. Toss to coat evenly.
  4. Create a space in the center of the potatoes and place the feta cheese there.
  5. Bake in the oven for 30-35 minutes or until the potatoes are tender and golden.
