  • 1 cup orzo pasta
  • 2 cups beef broth
  • 1 can diced tomatoes

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  2. Add beef stew meat, cooking until browned on all sides.
  3. Stir in diced tomatoes, beef broth, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 1.5 hours, or until beef is tender.
  5. Add the orzo pasta, stir, and cook for an additional 10-12 minutes until pasta is tender.
