Ingredients

  • 2 medium beets, roasted and sliced
  • 1 ball burrata cheese
  • 1/4 cup pine nuts, toasted
  • 2 cups arugula
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt to taste
  • Freshly cracked black pepper to taste

Instructions

  1. Roast the beets in the oven until tender, about 45 minutes. Let them cool, then slice.
  2. On a serving plate, place a bed of arugula.
  3. Arrange the sliced beets on top of the arugula.
  4. Gently place the burrata in the center of the beets.
  5. Sprinkle the toasted pine nuts over the salad.
  6. Drizzle the olive oil and balsamic vinegar over the top.
  7. Season with salt and pepper to taste.
