- 8 Biscoff cookies
- 1 cup strong brewed coffee, cooled
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons cocoa powder, for dusting
- In a medium bowl, whip the heavy cream until stiff peaks form.
- In another bowl, mix mascarpone, sugar, and vanilla until smooth.
- Fold the whipped cream into the mascarpone mixture gently.
- Dip Biscoff cookies briefly in the cooled coffee.
- Layer soaked cookies in a serving dish and spread half of the mascarpone mixture on top.
- Repeat with another layer of cookies and the remaining mascarpone.
