Blackberry cheesecake

  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup blackberry puree

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine crushed graham crackers and melted butter, and press into the bottom of a springform pan.
  3. In another bowl, mix cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract and blackberry puree until well combined.
  6. Pour the cream cheese mixture over the crust.
  7. Bake for 50-60 minutes or until set. Let cool, then refrigerate for at least 4 hours before serving.

Notes

  • For an extra fruit topping, add fresh blackberries before serving.
  • This cheesecake can be frozen for up to 2 months.
