- 1 pound white fish (such as cod or halibut)
- 1 pound mussels, cleaned
- 1 pound shrimp, peeled and deveined
- 4 cups fish stock
- 1 onion, diced
- 2 cloves garlic, minced
- 1 fennel bulb, chopped
- 2 tomatoes, diced
- 1 teaspoon saffron threads
- 1 teaspoon thyme
- 1 teaspoon paprika
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 lemon, juiced
- In a large pot, heat olive oil over medium heat. Add onions, garlic, and fennel, and sauté until softened.
- Add tomatoes, saffron, thyme, and paprika, stirring for a couple of minutes.
- Pour in the fish stock and bring the mixture to a boil.
- Add the white fish, mussels, and shrimp. Reduce heat and simmer until the fish is cooked through and the mussels have opened, about 10 minutes.
- Season with salt, pepper, and lemon juice before serving.
