  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 teaspoons vegetable oil

Instructions

  1. In a large bowl, mix together the peanut butter and softened butter until well combined.
  2. Gradually add in powdered sugar and vanilla extract, mixing until a dough forms.
  3. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  4. Freeze the balls for at least 30 minutes until firm.
  5. In a microwave-safe bowl, melt the chocolate chips and vegetable oil together until smooth.
  6. Dip each frozen ball into the melted chocolate, covering them completely.
  7. Return the chocolate-covered cookies to the baking sheet and let them set at room temperature.

Notes
