  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
  2. Add the chicken breasts and cook until browned on all sides.
  3. Stir in the green chilies, white beans, chicken broth, Cajun seasoning, salt, and pepper.
  4. Bring to a simmer, cover, and cook for 20-25 minutes until the chicken is cooked through.
  5. Remove the chicken, shred it, and return it to the pot. Stir in the heavy cream and heat through.
