Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  3. In a mixing bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract, ground cinnamon, and sour cream.
  6. Pour the cream cheese mixture over the crust and smooth the top.
  7. Bake for 50-60 minutes or until the center is set.
  8. Let it cool before refrigerating for at least 4 hours.
