  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in baking soda and salt.
  5. Add the sugar, beaten egg, and vanilla extract, and mix well.
  6. Finally, stir in the flour until just combined.
  7. In a separate bowl, mix the sugar and cinnamon for the swirl.
  8. Pour half of the batter into a greased loaf pan, sprinkle with half of the cinnamon sugar mixture, then add the remaining batter and the rest of the cinnamon sugar on top.
  9. Bake for 60 minutes or until a toothpick comes out clean.
  10. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • For best flavor, use overripe bananas.
  • Try adding chopped walnuts or chocolate chips for extra texture.
