Classic Vichyssoise Soup

A classic French soup that is perfect for any season, typically served chilled.

Ingredients

  • 4 large leeks, white parts only, cleaned and chopped
  • 4 medium potatoes, peeled and diced
  • 5 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the leeks, potatoes, and vegetable broth.
  2. Bring to a boil, then reduce heat and simmer until the vegetables are tender.
  3. Remove from heat and let cool slightly.
  4. Blend the soup until smooth, then stir in the heavy cream.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 2 hours before serving.
