A delicious and easy coconut curry noodle bowl featuring turkey bacon, perfect for a quick meal.

  • 8 ounces rice noodles
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 tablespoon curry powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1 tablespoon soy sauce
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the rice noodles according to package instructions, then set aside.
  2. In a large skillet, cook turkey bacon until crispy, then remove and chop.
  3. Add olive oil to the same skillet and sauté mixed vegetables until tender.
  4. Pour in coconut milk and vegetable broth, then stir in curry powder, garlic powder, and ginger.
  5. Simmer for about 5 minutes, then add the cooked noodles and chopped turkey bacon.
  6. Mix well and add soy sauce and salt to taste.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • For a vegetarian version, omit turkey bacon and add more vegetables.
  • Adjust the spice level by adding chili flakes if desired.
