  • 1 cup butternut squash puree

  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can coconut milk
  • 2 tablespoons butter
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup fresh cilantro, chopped

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the garlic and ginger, and cook for another minute.
  3. Add the chicken thighs to the skillet and brown on all sides.
  4. Mix in the butternut squash puree, coconut milk, garam masala, turmeric, cumin, salt, and pepper.
  5. Bring the mixture to a simmer and cover. Cook for about 20-25 minutes, or until the chicken is cooked through.
  6. Stir in the fresh cilantro before serving.
