  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • 1 cup sour cream
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a springform pan to form the crust.
  3. In a mixing bowl, beat the cream cheese with granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract, heavy cream, and sour cream until fully combined.
  5. Pour the cheesecake batter over the crust and smooth the top.
  6. Bake for about 60-70 minutes or until the center is set.
  7. Let the cheesecake cool completely before refrigerating for at least 4 hours.
  8. Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize it.
