Creamy Hungarian Mushroom Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound mushrooms, sliced
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and sauté until translucent.
  2. Add garlic and sliced mushrooms, cooking until the mushrooms are browned.
  3. Stir in paprika and vegetable broth. Bring to a boil, then reduce heat and simmer.
  4. Remove from heat and blend the soup until smooth.
  5. Return soup to the pot and stir in heavy cream. Heat gently and adjust seasoning.
  6. Serve hot, garnished with fresh parsley.

Notes

  • The soup can be blended to the desired consistency, either fully smooth or left slightly chunky.
  • For added flavor, try using different varieties of mushrooms.
