Creamy Loaded Baked Potato Soup Recipe

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot until crispy, then remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Peel and cube the potatoes, then add them to the pot with the chicken broth.
  4. Bring to a boil and then reduce heat; simmer until potatoes are tender.
  5. Stir in the heavy cream, cheese, and sour cream, cooking until cheese is melted.
  6. Crumble the bacon and add it back into the pot.
  7. Season with salt and pepper, then serve garnished with green onions.

Notes

  • For a lighter version, use reduced-fat cream and cheese.
  • This soup can be frozen for up to 3 months.
