Creamy Polenta with Poached Eggs

A delicious blend of creamy polenta paired with perfectly poached eggs and savory turkey bacon.

  • 1 cup polenta
  • 4 large eggs
  • 4 slices turkey bacon
  • 4 cups water
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. In a medium saucepan, bring water and salt to a boil.
  2. Whisk in the polenta and reduce heat to low.
  3. Cook, stirring frequently, until thickened, about 5-7 minutes.
  4. Stir in butter and Parmesan cheese until melted.
  5. Meanwhile, cook turkey bacon in a skillet until crispy.
  6. In a separate pot, poach the eggs in gently simmering water for 3-4 minutes.
  7. To serve, spoon the creamy polenta into bowls, top with poached eggs and crispy bacon, and sprinkle with parsley.

Notes

  • For extra flavor, you can add garlic or onion powder to the polenta while cooking.
