Crispy Saucy Chicken with Vegetable Fried Rice

A deliciously crispy and saucy chicken served alongside tasty vegetable fried rice.

Ingredients

  • 4 pieces chicken thighs
  • 1 cup jasmine rice
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 2 green onions, sliced
  • 1 tablespoon cornstarch
  • 1 teaspoon black pepper

Instructions

  1. Cook the jasmine rice according to package instructions.
  2. In a bowl, mix soy sauce, sesame oil, ginger, garlic, and black pepper.
  3. Marinate the chicken thighs in the sauce for at least 30 minutes.
  4. Heat oil in a pan and cook the marinated chicken until golden and crispy.
  5. In another pan, stir-fry the mixed vegetables until tender.
  6. Add the cooked rice and green onions to the vegetables, then stir to combine.
  7. Serve the crispy chicken on top of the vegetable fried rice.

Notes

  • For extra flavor, let the chicken marinate overnight.
  • Use any vegetables of your choice.
