Cuban-Style Churrasco with Chimichurri Sauce

A delicious recipe for Cuban-style churrasco served with a vibrant chimichurri sauce.

  • 2 pounds flank steak
  • 1 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 4 garlic cloves
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon red pepper flakes
  • salt to taste
  • pepper to taste

Instructions

  1. Prepare the chimichurri sauce by blending parsley, cilantro, garlic, olive oil, red wine vinegar, red pepper flakes, salt, and pepper in a food processor.
  2. Marinate the flank steak with the chimichurri sauce for at least 2 hours.
  3. Preheat the grill to medium-high heat.
  4. Grill the flank steak for about 5-7 minutes on each side for medium-rare.
  5. Remove from grill and let rest before slicing.
  6. Serve with additional chimichurri sauce on the side.

Notes

  • For best flavor, marinate the steak overnight.
  • Chimichurri sauce can be stored in the refrigerator for up to a week.
