2 pounds flank steak
1 cup fresh parsley
1/2 cup fresh cilantro
4 garlic cloves
1/2 cup olive oil
1/4 cup red wine vinegar
1 teaspoon red pepper flakes
salt to taste
pepper to taste
Instructions
Prepare the chimichurri sauce by blending parsley, cilantro, garlic, olive oil, red wine vinegar, red pepper flakes, salt, and pepper in a food processor.
Marinate the flank steak with the chimichurri sauce for at least 2 hours.
Preheat the grill to medium-high heat.
Grill the flank steak for about 5-7 minutes on each side for medium-rare.
Remove from grill and let rest before slicing.
Serve with additional chimichurri sauce on the side.
Notes
For best flavor, marinate the steak overnight.
Chimichurri sauce can be stored in the refrigerator for up to a week.
