Ingredients

  • 2 medium sweet potatoes
  • 4 slices turkey bacon
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Peel and cube the sweet potatoes. Boil them in salted water until tender.
  2. In a large skillet, cook the turkey bacon until crispy, then remove and crumble it.
  3. In the same skillet, add olive oil and sauté the spinach until wilted. Add the garlic powder, salt, and pepper.
  4. Drain the sweet potatoes and mix them with the sautéed spinach and crumbled bacon.
  5. Serve warm and enjoy!
