- 1/3 cup melted butter
- 1 teaspoon baking soda
- pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter.
- Add baking soda and salt to the mixture.
- Mix in the sugar, egg, and vanilla extract.
- Finally, fold in the flour until just incorporated.
- Pour the batter into the greased muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring to a wire rack.
