Easy Chocolate Raspberry Tart

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 1 cup heavy cream
  • 8 ounces bittersweet chocolate, chopped
  • 2 cups fresh raspberries
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix the chocolate cookie crumbs and melted butter until well combined.
  3. Press the mixture into the bottom of a 9-inch tart pan.
  4. Bake for 10 minutes, then let it cool.
  5. In a saucepan, heat the heavy cream over medium heat until simmering.
  6. Remove from heat and add the chopped chocolate, stirring until smooth.
  7. Pour the chocolate mixture into the cooled tart shell and refrigerate for at least 2 hours.
  8. Once set, top with fresh raspberries and dust with powdered sugar before serving.
