  • 1 pound gnocchi
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble, leaving the drippings in the pot.
  2. Add onion and garlic to the pot; sauté until translucent.
  3. Stir in the diced chicken ham and cook for an additional 3 minutes.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the gnocchi and cook for 3 minutes, or until they float.
  6. Stir in kale and cook until wilted.
  7. Pour in the heavy cream and stir to combine.
  8. Season with Italian seasoning, salt, and pepper.
  9. Serve hot, garnished with crumbled turkey bacon.

Notes

  • This soup can also be made with regular bacon or sausage for a richer flavor.
