  • 1 cup graham cracker crumbs
  • 3 tablespoons sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of mini cheesecake pans.
  3. In another bowl, beat the cream cheese until smooth. Gradually add powdered sugar, mixing until well combined.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Pour the cheesecake mixture over the prepared crusts.
  6. Bake for about 20-25 minutes until set. Remove from the oven and let them cool.
  7. Top with fresh berries before serving.
