- 1 cup graham cracker crumbs
- 3 tablespoons sugar
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of mini cheesecake pans.
- In another bowl, beat the cream cheese until smooth. Gradually add powdered sugar, mixing until well combined.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Pour the cheesecake mixture over the prepared crusts.
- Bake for about 20-25 minutes until set. Remove from the oven and let them cool.
- Top with fresh berries before serving.
