- 1 cup fresh raspberries
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup espresso or strong coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 24 ladyfingers
- 1 tablespoon cocoa powder for dusting
- Whip the heavy cream until stiff peaks form, then gently fold in the mascarpone, sugar, and vanilla.
- In a shallow dish, combine the espresso and coffee liqueur.
- Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy.
- Layer half of the soaked ladyfingers in a dish, followed by half the mascarpone mixture, and half the fresh raspberries.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.
