Fresh Raspberry Tiramisu

A delightful and easy dessert that combines the luscious flavors of fresh raspberries and classic tiramisu.

  • 1 cup fresh raspberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup espresso or strong coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 24 ladyfingers
  • 1 tablespoon cocoa powder for dusting

Instructions

  1. Whip the heavy cream until stiff peaks form, then gently fold in the mascarpone, sugar, and vanilla.
  2. In a shallow dish, combine the espresso and coffee liqueur.
  3. Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy.
  4. Layer half of the soaked ladyfingers in a dish, followed by half the mascarpone mixture, and half the fresh raspberries.
  5. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.
  6. Chill for at least 4 hours or overnight.
  7. Before serving, dust with cocoa powder.

Notes

  • For an extra splash of flavor, add lemon zest to the mascarpone mixture.
  • Feel free to substitute other berries if raspberries are not available.
