Fresh Raspberry Tiramisu

  • 2 cups fresh raspberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed espresso, cooled
  • 12 ladyfinger cookies

Instructions

  1. In a large bowl, beat the heavy cream with sugar and vanilla until soft peaks form.
  2. In another bowl, gently fold the mascarpone into the whipped cream.
  3. Dip ladyfingers quickly into the espresso and layer them in a dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Add a layer of fresh raspberries.
  6. Repeat the layers with remaining ingredients, finishing with raspberries on top.
  7. Chill for at least 4 hours before serving.

Notes

  • For extra flavor, consider adding a splash of liqueur to the espresso.
