  • 4 pieces chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 pound potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 pound baby carrots
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic powder, oregano, and thyme. Coat the chicken breasts with this mixture.
  3. Place the chicken on a baking sheet and bake for 25-30 minutes, until fully cooked.
  4. Meanwhile, boil the potatoes in salted water until tender, then drain.
  5. Mash the potatoes with milk and butter until smooth.
  6. In a separate pan, glaze the carrots with honey over medium heat until tender.
  7. Serve the chicken with mashed potatoes and glazed carrots.
