Gluten Free Lemon Crinkle Cookies

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine gluten free flour, baking powder, and salt.
  3. In a separate large bowl, mix sugar, lemon juice, lemon zest, vegetable oil, egg, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Using a spoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheet.
  6. Roll the dough balls in powdered sugar until they’re coated.
  7. Bake for 10-12 minutes, or until the edges are set and the tops have crinkled.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
