  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 1 cup feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 1 tablespoon fresh dill, chopped

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken cubes to the marinade and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Thread chicken, bell pepper, and onion onto skewers.
  5. Grill for 10-15 minutes, turning frequently until chicken is cooked through.
  6. Meanwhile, mix feta cheese, Greek yogurt, and dill in a bowl for the feta dip.
  7. Serve grilled skewers on a platter with cherry tomatoes and feta dip.

Notes

  • For best flavor, marinate the chicken overnight.
  • Feel free to add other vegetables like zucchini or mushrooms.
