Healthy Banana Oatmeal Muffins

  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the bananas until smooth. Add the honey or maple syrup and applesauce, mixing well.
  3. Stir in the eggs and vanilla extract.
  4. In a separate bowl, combine the rolled oats, baking soda, salt, and cinnamon.
  5. Fold the dry ingredients into the wet ingredients until just combined.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.
