- 2 chicken breasts
- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup BBQ sauce
- 2 cups mixed greens
- 1/4 cup chopped cilantro
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes, then toss with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
- While the sweet potatoes are roasting, grill or pan-sear the chicken breasts until fully cooked. Brush with BBQ sauce during the last few minutes of cooking.
- Once cooked, slice the chicken and serve over a bed of mixed greens, topped with roasted sweet potatoes, BBQ sauce, and cilantro.
