Ingredients

  • 2 chicken breasts
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup BBQ sauce
  • 2 cups mixed greens
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes, then toss with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
  4. While the sweet potatoes are roasting, grill or pan-sear the chicken breasts until fully cooked. Brush with BBQ sauce during the last few minutes of cooking.
  5. Once cooked, slice the chicken and serve over a bed of mixed greens, topped with roasted sweet potatoes, BBQ sauce, and cilantro.
