  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup raisins or walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together rolled oats, grated carrots, almond flour, honey or maple syrup, melted coconut oil, and vanilla extract.
  3. Add in the cinnamon, baking powder, and salt; stir until well combined.
  4. If using, fold in the raisins or walnuts.
  5. Drop tablespoons of the dough onto the prepared baking sheet and flatten slightly.
  6. Bake for 12-15 minutes or until the edges are golden brown.
  7. Allow to cool before serving.

Notes

  • These cookies can be easily customized by adding nuts, seeds, or dried fruit.
