  • 1 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 1/2 cups whole wheat flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas with a fork.
  3. Add the Greek yogurt, honey, eggs, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the baking soda, baking powder, cinnamon, and whole wheat flour.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.
