Healthy Ground Turkey Taco Salad

A delicious and healthy taco salad made with ground turkey, fresh veggies, and a zesty dressing.

Ingredients

  • 1 pound ground turkey
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 large bell pepper, diced
  • 1 small red onion, diced
  • 1 head romaine lettuce, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 1/2 cup salsa
  • 1/2 cup shredded cheese
  • 1 avocado, sliced

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add ground turkey, cook until browned and fully cooked.
  3. Stir in taco seasoning and cook for an additional 2 minutes.
  4. In a large bowl, combine lettuce, tomatoes, black beans, corn, bell pepper, and red onion.
  5. Add the cooked turkey on top of the salad.
  6. Drizzle with salsa and sprinkle with cheese and avocado slices.
  7. Toss gently before serving.

Notes

  • For extra flavor, add lime juice to the salad.
  • You can add jalapeños for spice.
