- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) white beans, rinsed and drained
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 cup chopped kale
- 1/2 cup diced chicken ham
- Salt to taste
- In a large pot, heat the olive oil over medium heat.
- Add the turkey bacon and cook until crispy.
- Add onions and garlic, cooking until onions are translucent.
- Stir in the white beans, chicken broth, thyme, and black pepper.
- Bring to a boil, then reduce to a simmer for 15 minutes.
- Add kale and chicken ham, cooking for an additional 5 minutes.
- Season with salt to taste before serving.
Notes
- For a vegetarian version, omit turkey bacon and use vegetable broth.
