Hearty Tuscan White Bean Soup

A deliciously hearty soup packed with flavors from turkey bacon, chicken ham, and white beans.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) white beans, rinsed and drained
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped kale
  • 1/2 cup diced chicken ham
  • Salt to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy.
  3. Add onions and garlic, cooking until onions are translucent.
  4. Stir in the white beans, chicken broth, thyme, and black pepper.
  5. Bring to a boil, then reduce to a simmer for 15 minutes.
  6. Add kale and chicken ham, cooking for an additional 5 minutes.
  7. Season with salt to taste before serving.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
  • Serve with crusty bread for a complete meal.
