- 2 cups cottage cheese
- 1 cup chopped spinach
- 1 cup diced bell peppers
- 1 cup sliced mushrooms
- 1 cup grated zucchini
- 1/2 cup shredded cheese
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine cottage cheese, spinach, bell peppers, mushrooms, and zucchini.
- In another bowl, whisk together eggs, garlic powder, onion powder, salt, pepper, and oregano.
- Pour the egg mixture over the veggie mixture and stir until well combined.
- Transfer the mixture to a greased baking dish and top with shredded cheese.
- Bake for 30-35 minutes or until set and golden on top.
