  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 2 tablespoons coffee liqueur (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the butter until creamy, then add eggs and vanilla, mixing until well combined.
  4. Add the dry ingredients to the wet ingredients, alternating with the brewed coffee, until just mixed.
  5. Pour the batter into the cupcake liners, filling each about two-thirds full. Bake for 20-25 minutes.
  6. For the frosting, whip the mascarpone cheese, heavy cream, and powdered sugar until fluffy. If using, add the coffee liqueur and mix.
  7. Once the cupcakes are cool, frost them generously with the mascarpone frosting.
  8. Garnish with cocoa powder or chocolate shavings, if desired.
