  • 1 pound ground beef
  • 4 ounces turkey bacon
  • 1 cup cauliflower rice
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1/4 cup diced cilantro

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove and set aside, then use the same skillet to cook the ground beef until browned.
  2. Add diced bell peppers, onions, garlic powder, chili powder, cumin, salt, and pepper to the beef, and sauté until the vegetables are tender.
  3. Stir in the cauliflower rice and cook for another 5-7 minutes until heated through.
  4. Serve in bowls topped with shredded cheese, sour cream, and cilantro.
