Low Carb Stir Fry Zucchini with Mushrooms and Onions

A delicious and healthy low carb dish combining zucchini, mushrooms, and onions.

Ingredients

  • 2 medium zucchinis
  • 1 cup sliced mushrooms
  • 1 large onion
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon soy sauce

Instructions

  1. Slice the zucchini, mushrooms, and onion.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add garlic and sauté for 1 minute.
  4. Add the onions and cook until translucent.
  5. Add zucchini and mushrooms; stir-fry for about 5-7 minutes.
  6. Season with salt, pepper, and soy sauce. Stir well.
  7. Cook for an additional 2 minutes and serve hot.
