Maple Roasted Pumpkin

  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the pumpkin in half and remove the seeds.
  3. In a bowl, mix the maple syrup, olive oil, cinnamon, nutmeg, and salt.
  4. Brush the mixture on the cut sides of the pumpkin.
  5. Place the pumpkin halves cut-side down on a baking sheet.
  6. Bake for 30-40 minutes until tender.
  7. Cool slightly, then scoop out the flesh and serve.
