Melting Sweet Potatoes

A delicious and comforting dish featuring sweet potatoes and turkey bacon.

  • 4 medium sweet potatoes
  • 6 slices of turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and bake for 45 minutes, or until soft.
  3. While the potatoes are baking, cook the turkey bacon in a skillet until crispy and set aside.
  4. Once the sweet potatoes are done, allow them to cool slightly, then scoop the insides into a bowl.
  5. Add olive oil, salt, pepper, and paprika to the sweet potato and mix well.
  6. Combine the sweet potato mixture with crumbled turkey bacon and mix.
  7. Stuff the sweet potato skins with the mixture and return to the oven for an additional 10 minutes.
  8. Garnish with fresh parsley before serving.

Notes

  • For a creamier texture, consider adding a splash of cream or milk to the sweet potato mixture.
  • Feel free to use regular bacon instead of turkey bacon for a different flavor.
