  • 2 tablespoons soy sauce

  • 2 cloves garlic, minced

  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants in half lengthwise and score the flesh.
  3. In a bowl, mix miso paste, soy sauce, maple syrup, sesame oil, garlic, and ginger.
  4. Brush the mixture over the eggplant halves.
