  • 1/4 cup miso paste

  • 1 tablespoon soy sauce

  • 1 teaspoon rice vinegar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplants in half lengthwise.
  3. In a bowl, mix the miso paste, honey, soy sauce, sesame oil, and rice vinegar.
  4. Brush the miso mixture generously over the cut sides of the eggplants.
  5. Arrange the eggplants on a baking sheet, cut side up.
  6. Bake for 20-25 minutes, or until the eggplants are tender and the glaze is caramelized.
  7. Remove from the oven and let cool slightly before serving.

Notes

  • For a spicier version, add chili paste to the miso mix.
  • Serve with rice or quinoa for a complete meal.
