Mouthwatering One Pot Lasagna Soup

This One Pot Lasagna Soup is the perfect combination of comforting flavors and easy preparation. A hearty and delicious meal that will warm your heart.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 4 cups beef broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned.
  2. Add the onion, garlic, oregano, and red pepper flakes. Cook until the onion is translucent.
  3. Pour in the beef broth and crushed tomatoes. Stir in the salt and pepper.
  4. Add the broken lasagna noodles and cook according to the package instructions until al dente.
  5. Once cooked, stir in the ricotta cheese and half of the mozzarella cheese until melted.
  6. Top with remaining mozzarella cheese and fresh basil before serving.

Notes

  • For extra flavor, add a splash of balsamic vinegar before serving.
  • Feel free to substitute ground turkey for a lighter version.
