Orzo, Leek and Dill Soup

A comforting soup featuring orzo, leeks, and fresh dill that’s both delicious and easy to make.

  • 1 cup orzo pasta
  • 2 leeks, sliced
  • 4 cups vegetable broth
  • 1 cup fresh dill, chopped
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a pot, heat olive oil over medium heat. Add leeks and cook until soft.
  2. Add vegetable broth and bring to a boil.
  3. Stir in orzo and cook according to package instructions.
  4. Once the orzo is tender, stir in the fresh dill.
  5. Season with salt and pepper to taste.

Notes

  • This soup can easily be customized with additional vegetables.
