  • 1 cup ground pistachios
  • 1 cup powdered sugar
  • 4 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 1/2 cup pistachio paste
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the ground pistachios and powdered sugar.
  3. In another bowl, beat the egg whites and cream of tartar until soft peaks form.
  4. Add granulated sugar gradually and continue to beat until stiff peaks form.
  5. Gently fold in the pistachio mixture into the egg whites.
  6. Pipe the mixture onto lined baking sheets to form circles.
  7. Bake for 20-25 minutes or until golden.
  8. Whip the heavy cream until soft peaks and mix in pistachio paste and vanilla.
  9. Once the meringues are cool, layer with the cream mixture.
  10. Top with additional crushed pistachios.

Notes

  • For best results, use room temperature egg whites.
  • Be careful not to overmix the batter.
