  • 1 cup pistachios, shelled
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 cup brewed espresso, cooled
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder
  • 1 package ladyfinger cookies

Instructions

  1. Blend the pistachios in a food processor until finely ground.
  2. In a bowl, combine mascarpone cheese, sugar, and heavy cream until smooth.
  3. Add the cooled espresso and vanilla extract to the mascarpone mixture. Mix well.
  4. Dip ladyfingers briefly in espresso and layer them in a dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Repeat the layers, finishing with the mascarpone mixture.
  7. Dust the top with cocoa powder and sprinkle chopped pistachios.
  8. Chill for at least 4 hours before serving.
