  • ½ cup sugar
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • ½ cup pumpkin puree
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth.
  4. Add pumpkin puree, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Mix until fully combined.
  5. Pour the cheesecake batter over the crust in the pan.
  6. Bake for 50-60 minutes until set. Let it cool before refrigerating.
  7. Chill for at least 4 hours or overnight before serving.
